The original frame building which housed the Tavistock Cheese Company was built by Thomas Ballantyne and William Gillard in 1878. It was also home for the first Dairy School in Ontario operated by A. T. Bell.
The cheese and buttermaking process was documented in 1925 when the Tavistock factory was honoured in having the greatest percentage of special grade cheese of any factory in Canada. That year, 99.5 percent of the cheese produced by the company was graded No. 1
